2 quarts (Canola, Peanut, Vegetable)
Broasted Chicken Recipe Ingredient
Directions
Pour the milk into a large baking bowl, or a large plastic bag. Add 4 teaspoons of salt and mix it. Then place your chicken pieces in your buttermilk brine. If you use a bowl, cover your bowl with a plastic bag and place it in your refrigerator or fridge. If you use a plastic bag it does not leak. Brine the chicken in your milk for at least 4 hours or overnight.
When you are ready to cook the chicken, set out another cooking bowl. Combine the flour and 1 teaspoon of salt, with the some of them:
Turmeric
Paprika
Chili Powder
Black Pepper
Mix well to combine and make sure the seasonings are thoroughly blended into the flour.
Start by setting out a plate or tray for your chicken breast. All pieces at a time, remove the chicken from the buttermilk brine and place the chicken in the flour mixture. Roll it around in the flour and gently tap the chicken off so the breading coat is light. Place them on the prepared baking sheet.
Set all the chicken pieces before you preheat the oil, so they have time to rest before roasting.
Broaster Method
Pour the frying oil into the roaster and Preheat to 370°F.
Once the oil comes to a gently, temperature place each chicken piece in the warm oil, starting with the breasts.
Close the cover and cook your chicken for 8 to 12 minutes, until golden and brown. The internal temperature of the chicken is almost 170°F. Make sure to have a meat thermometer on your hand.
Stovetop Method
Set a large quart Dutch oven on the stove and attach a cooking thermometer to the side of your bowl. Pour the oil into the pot and set the burner on high-medium.
When the oil reaches 375°F, gently place the pieces of the chicken in the frying oil, one at a time. Gently stir the chicken pieces around the pot. Check the temperature of the stovetop and customize the heat the chicken needs to keep the temperature between 345-350°F.
Once the temperature is stable, remove the thermometer and place a cover on top of the bowl. Fry the chicken for 12 to 15 minutes, until golden brown, with an internal temperature of 170°F.
Instant Pot Method
Once the oil is hot, place the breasts down in the bottom of the bowl, followed by all the remaining pieces.
Set the cover back on the top of the instant bowl. If your instant bowl automatically closes when the cover is on, turn the cover to the side so that it is covering the chicken but it is not setting off the default functions. Fry the chicken for 14 to 16 minutes, until the recipe for chicken broast is golden and the internal temperature is 165°-170° on a meat thermometer.
