Directions

Step 1:

To wash the dried scallops, for the first step add the dried scallops to a bowl with water and warm it on a stove for about 10 minutes and you’ll see that the water will clean the scallops easily.

Step 2:

For roasting, cook the ginger root and yellow onion for 15 minutes or until when you see charred edges which means it has cooked.

Step 3:

Sear the fennel seeds and coriander seeds in a pan on the stove to make a herb bundle and cook them for about 3 minutes until you get a smell of toasty aroma then add these herbs to a cheesecloth and tie it with butcher twine tightly.

Step 4:

Dip your chicken into a soup pot to clean it and pour water in it till the chicken is covered in the water and boil this, when it boils remove the chicken which is clean now.

Step 5:

Again repeat the above step to make broth by putting the chicken in a soup pot and filling it with clean water, also add ginger, dried scallops, daikon, onion, and the herb bundle. Boil all these things and after boiling cook for about 30 more minutes on low heat.

Step 6:

When it has simmered for about 30 minutes remove the chicken from the pot and let it cool so that it can be handled easily but remember to continue simmering the broth. After the chicken is cool, shred it and put the bones back into the soup. Add chicken broth and cook for another two and half hours and add salt to your taste.

Step 7:

When the soup is ready after cooking, strain it into another soup pot through a fine strainer to get the cleanest broth by getting rid of all solids from the soup.

Step 8:

During the cooking of the soup, prepare toppings of cilantro and green onions by mincing them, and after preparing the toppings place them in the refrigerator.

Step 9:

The next step is to boil the noodles, for this if you have fresh noodles simply cook in boiling water for 2 minutes on the other hand if you have dried noodles, then they will take about 8-10 minutes.

Step 10:

That’s it, you have prepared everything successfully, and it’s time to combine all the ingredients by putting them all together in a bowl and ladling the soup over the top for serving.

My Hainanese chicken recipe is also quick and delicious that you can make.

Is chicken pho healthy?

Yes, chicken pho is very healthy but if you use a low quantity of processed ingredients instead use a lot of herbs and veggies and healthy aromatics. You can make it more healthy if you use leaner meats in the replacement of dipping sauces.
