Special Chicken Tikka Masala Recipe

Ingredients of Chicken Tikka Masala
Chicken Marinade | Sauce |
28 oz Chicken Thighs | 2 tbsp Oil |
1 cup Plain Yogurt | 2 tbsp Butter |
1 1/2 tbsp Minced Garlic | 2 Small Onions |
1 tbsp Ginger | 1 1/2 tbsp Garlic |
2 tsp Garam Masala | 1 tbsp Ginger |
1 tsp Turmeric | 1 1/2 tsp Garam Masala |
1 tsp Ground Cumin | 1 1/2 tsp Ground Cumin |
1 tsp Kashmiri Chili | 1 tsp Turmeric Powder |
1 tsp Salt | 1 tsp Ground Coriander |
– | 14 oz Tomato Puree |
– | 1 tsp Kashmiri Chili |
– | 1 tsp Ground Red Chili Powder |
– | 1 tsp Salt |
– | 1 1/4 cups Heavy Cream |
– | 1 tsp Brown Sugar |
– | 1/4 cup Water (if needed) |

Directions to Cook Chicken Tikka Masala
Follow my easy steps to make this simple and spicy chicken tikka masala:
Step 1
Take a large bowl. Put all the marinade ingredients in it while adding the chicken. Combine everything very well. So, the chicken pieces are coated completely. Let it marinate overnight. But, if you don’t have much time. Put it to marinate for only half an hour.
Step 2
Get a big skillet or pot and pour some oil in it to get it hot and when it starts sizzling add chicken pieces and make sure not to crowd in the pot. Put the chicken pieces in two or three batches and fry for about 3 minutes from each side or until browned.
Step 3
Now melt the butter in a pan or pot and put onion in it to fry for about 3 minutes here you can add the ginger and garlic and cook for 1 minute then add garam masala, coriander, and turmeric, and make sure to stir continuously.
Step 4
Put chili powder, salt, and tomato puree and continue to simmer for 15 minutes while stirring often till the sauce is thick and its color is deep brown.
Step 5
Now add the chicken and all its juices into the pot. Cook more for about 10 minutes. Till the chicken is cooked well and the sauce starts to bubble, if the sauce is thickened then you can add some water to balance it. Your chicken tikka masala is ready.
Step 6
Garnish it with cilantro/coriander. Serve and enjoy.

Thighs Or Breasts for Chicken Tikka Masala
You can use chicken breasts as well as thighs it’s up to you to choose any cuts of the chicken. I suggest choosing thighs because these are juicy and produce better results. If you are going with breasts then marinate them overnight so that yogurt can tenderize them.
Pro Tips
- Yogurt is an important ingredient. It adds a unique flavor. It prevents the chicken from getting dry. Also, tenderize the chicken.
- Use strained yogurt, Greek yogurt, or Hung curd as in Indian cuisine. It will work perfectly. While runny yogurt can drain all the spicy marinade in the pan. When you grill the chicken.
- When we talk about chili the Kashmiri red chili powder is fine to use in the recipe because it is not that much spicy on heat levels but you have the option of smoked paprika to use if you find it difficult to use red chili.
- You can customize the recipe. Adjust the ingredients. According to your taste and servings.
- Skillet, pot, or pan all are perfect. In the pot just make sure that your marinade is thick. If it is runny then masala will not stay on the chicken.
- You can use bell peppers. In that scenario, grill the bell peppers and chicken separately to get perfect results.
