Butter | 4 – 6 Tablespoons, divided |
Carrots | 1 Heaping Cup (from 1 cup baby carrots or 2 large carrots) |
Seasoned Salt & Pepper | Homemade (see notes) |
Long Grain White Rice | 2 Scant Cups (Lundberg White Jasmine Rice) |
Dried Minced Onion | 1 Tablespoon |
Dried Minced Garlic | 1 Teaspoon |
Dried Parsley Flakes | 2 Tablespoons |
Chicken Stock | 8 Cups |
Chicken Breasts | 2 Small (14oz), cut into bite-sized pieces |
Directions
Step 1
Take a soup pot and add carrots with butter then add salt pepper and cover it with a lid and cook for about 6 minutes.
Step 2
Add long-grain white rice, garlic, and onion then cook for about a minute to saute and mix the rice with butter well.
Step 3
It’s time to add chicken stock and parsley to the pot bring it to a boil and make sure that the rice doesn’t stick to the bottom continue simmering for 15 minutes also don’t forget to stir.
Step 4
Now sprinkle salt and pepper over chick breasts, make small size pieces of chicken breasts so they can easily cook. If required season some more salt and pepper and cook for 7-10 minutes more until chicken and rice are cooked well.
Step 5
Remove the pot from the stove and let it cool for 5 minutes while it is placed aside. You can add some more butter according to your choice if you want to add it more.
When this chicken with rice recipe cools it will thicken and I let it cool for more than 10 minutes so that the rice is settled well.
