Best Japanese Fried Chicken
Japanese fried chicken is the most famous dish in Japan and the world because of the soy sauce ginger and mirin which gives it a sweet taste. The chicken is fried twice, which is why It becomes crunchy on the outside and juicy on the inside. Potato starch is mainly used in this recipe but corn starch will also be used. Ingredients Japanese Fried Chicken
- Soy Sauce Light soya sauce works best(add saltness to chicken)
- Sake Japanese rice wine(add flavor in marination)
- Ginger & Garlic May be used in fresh or minced form.
- Mayonnaise Helps to emulsify fat and tender chicken
- Sesame Oil Help to deep fry the chicken pieces
- 2-3 teaspoons sugar
- chicken thighs (4 pieces)
- 1 or half cup potato starch
- sea salt(according to taste)
- black pepper( according to taste)
- Lettuce and cucumber slices
- Peanut oil
Method of preparation (Japanese Fried Chicken)
Step 1
First, take the chicken, wash it well, and keep it dry for some time.
Step 2
First, take a big bowl and add marination spices like soy sauce, ginger, garlic, sugar and marinate and mix it well until it is combined. then take pieces of chicken and coat spices over it.
Step 3
Now take an oven tray and apply peanut oil on it, place an aluminum sheet on it and heat it at 350 degrees centigrade.
Step 4
Now take out the oven tray and place another layer of thin iron wire on top of the aluminum sheet.
Step 5
Take a bowl and mix potato starch, salt, and black pepper in it. Now take out the chicken pieces that have been marinated for four to five hours, take out chicken pieces from the marinated mixture, and pass them through this starch mixture one by one. Repeat this process with all the chicken pieces. and rest them for at least 20-30 minutes.
Step 6
Now before frying the chicken, stir the starch well and add the remaining starch to it. Now fry it on medium to low heat and add three or four pieces at a time, fry for 3-4 minutes or until it shows golden brown color. If you are frying it in an oven, the temperature of the oven should be around 325 degrees and its temperature should not be less than 300 degrees.
Step 7
When all the pieces are fried one by one, take them out on a plate, now fry them under high heat, put all the pieces together again in a pan, and cook them a second time. The purpose of the second cooking is that the chicken becomes more crunchy and gives a very appealing taste.
Step 8

Can I use Chicken Breast?
No, you can’t use chicken breast pieces in it at all, the main reason is that we have to fry the chicken twice in this recipe, due to double frying, the chicken will be crispy. The chicken breast pieces will break down and it won’t give you a crunchy taste. That’s why chicken thigh pieces are used which take longer to fry and do not fall apart after deep frying.

How long to marinate?
Marinating is the most important step in this Japanese Fried Chicken, the minimum time for marination is 30 minutes and the maximum time can be overnight. How long you marinate chicken will give you the most delicious taste.
What to serve?
You can also serve these chicken pieces with lemon wedges, mayonnaise, or ketchup which together will give you a very unique taste.
