Ingredients of One Pot Chicken And Rice

Chicken Thighs | 6 (4 ounces) bone-in, skin-on |
Kosher Salt | 1 ½ teaspoons, divided |
Ground Black Pepper | ¾ teaspoon |

Yellow Onion | ⅔ cup finely chopped |
Garlic | 2 cloves, minced |
Long-Grain Rice | 1 ½ cups uncooked |
Chicken Stock | 3 cups, divided, or more to taste |
Flat-Leaf Parsley | 1 tablespoon finely chopped |
Lemon | 1 medium, cut into wedges |
Directions to Make Chicken and Rice

Step 1
You can prepare your oven and set the temperature of the oven before baking the chicken to 375 degrees F that will help to cook one pot chicken and rice.
Step 2
I am using a Dutch oven to get the crispy chicken but you can choose any pot that you already have for this one-pot chicken put oil in it and heat the oil while at the same time sprinkling salt and pepper according to your taste on the chicken thighs and get ready for the next step.
Step 3
Now put the chicken in the Dutch oven and make sure to put the skin-side down and cook it for about 5 minutes but don’t disturb the chicken and cook until it turns golden and crispy. Then you can flip the side of the chicken and for 3 minutes more cook it but don’t cook it completely at this point after that remove the chicken from the oven to a plate and set aside.
Step 4
In this step, you just need to add some ingredients and cook them according to time as I mentioned down:
- Add butter and melt it in the drippings.
- Add onion and cook for about 3 minutes, also stir often till the onion is translucent.
- Add garlic and cook for 1 minute more.
- Add rice and cook and make sure to stir so that each grain gets the coat of all the mixture in the oven and toast lightly for about 1 minute.
- Add stock, pepper, and salt to the Dutch oven and bring to a boil.
- When the rice is ready, add the chicken thighs over the rice.
Step 5
Get ready your oven and warm it before starting the baking then put the dish in the oven for about 50-55 minutes and if the liquid has been absorbed before the cooking of the chicken and rice then you can add stock to the dish. When ready take out the dish from the oven.
Before serving, squeeze lemon juice and sprinkle parsley on the top of the dish and serve to enjoy one pot chicken and rice.

Can I Use Chicken Breasts in This One Pot Meal?
I recommend you go with the chicken thighs, yes you can choose chicken breasts but they will dry out because of the double cook of the chicken in this rice and chicken recipe. If you choose chicken thighs, they are juicy, and fattier thighs can make the dish more rich and nice looking. Whichever chicken cut-out you use just make sure it should be boneless because the chicken with bone-in takes more time to cook and may be not ready with the rice.
