Directions to Cook El Pollo Loco Chicken Recipe
Believe me, this recipe is so easy to make that you can prepare it within minutes just follow my simple steps:
- Combine all ingredients of the chicken, including the juiced fruit rinds, in a large plastic bag. Add in chicken and marinate for at least 10 hours overnight because marination in this specific recipe is very important and it allows the chicken to absorb all the yummy flavors of the ingredients to make it more tasty and delightful.
- When you are ready to cook, remove the chicken from the marinade and discard the marination because it is not of any use further.
- Grill the chicken for about 5-6 minutes a side over medium or high heat, or until they reach an internal temperature of about 165° or 170° Fahrenheit degrees.
- Your chicken is ready that you can serve to enjoy with your family or friends you can serve it with refried beans as I did and you have the option to mash the beans but if you don’t want to mash them it’s totally up to you.
Do I Have To Grill It?
The Pollo Loco recipe is my favorite way to eat the chicken especially when it is grilled. All of the citrus stands up to the scorch of BBQ, of course, you could just bake the chicken and it would still be delicious, yummy, tasty, and flavorful.
Tips & Tricks
- As you know turmeric is very good for health therefore don’t compromise on the turmeric as the yellow color is the recognition of this recipe which gives the chicken a bright color that also looks different than that of average citrus-marinated chicken so purchasing a small bottle will push you to make this copycat easy recipe again and again.
- To get more flavors in the recipe ensure to save fruit rinds and add them to the marination because they give an extra yummy, delightful, and delicious flavor to the chicken that you eat more.

Can I Use Chicken Thighs Instead of Chicken Breast?
Yes, you can use any cut out of the chicken but make sure it is with skin and boneless so you can get this copycat recipe as the original one, I recommend you not to use thighs because chicken breast pieces make this recipe a perfect one and make the chicken tender in it however thigh pieces are also good to go if you have not breast pieces.
