The people who don’t like meat that is why this Vegan Chicken Noodle Soup recipe is very important to them. This is a recipe that can be prepared in just 30 minutes and in this recipe, we do not use any type of meat but instead of chicken, we add red potatoes in it which will give it the same nutrient amount as meat gives us. Ingredients of Vegan Chicken Noodle Soup
- Carrots (4-5 but cut into the sliced or cubed form)
- Celery (you need one and a half cups of sliced celery)
- Yellow onion (1 cup of finely diced onion)
- Garlic (½ tablespoon or 3 large cloves in minced form)
- Red potatoes (3 red potatoes need which cut into ½ inches pieces)
- Veggie broth (2-3 cups if you don’t like then you can use water because of this broth your soup may be dark color but that was tasty)
- Dried thyme (almost 1-2 tbsp )
- Nutritional yeast (2 tablespoons)
- Noodles (gluten-free brown spring noodles)
- Parsley, and fresh lemon juice (for garnishing if you want)
- Sea salt and pepper (1 tablespoon)

Instructions To Make Vegetarian Chicken Noodle Soup
Step 1
First, cut the potato and carrot into half-inch slices and keep it aside then set all the spices on a table.
Step 2
Now take a big pan if you want to use veggie broth then take two to three cups if you don’t like it then t you can take three to four cups of water and boil then add spices like sea salt, nutritional yeast, and dried thyme to this broth and mix them well for 2-3 minutes.

Now take a separate pan, put water in it, and add a little salt. As soon as the water gets hot, add the noodles and wait until the noodles are completely cooked. You can also use Pasta or any type of macaroni.
Step 4
Now for the vegetable broth pan, you have to add potatoes, carrots, and red onion with these spices well and cook for some time till all these vegetables are totally cooked.
Step 5
Now add the pasta to this broth turn the heat to medium to high flame and cook it for about five to ten minutes until the pasta is fully cooked and mixed up in the broth.
Step 6
First of all, taste this chicken noodle soup if it has less salt and then add more amount of salt according to your taste if you feel that the broth used in it is less then you can add water or vegetable broth and cook it. You should then also increase the amount of spices by the same amount.
Step 7
Then place out in a separate bowl and before serving this tasty and delicious chicken soup first spread the black pepper and then sprinkle the lemon juice and paprika powder over it.
