Directions

Prepare this recipe in a very easy way just follow my steps to make a yummy dish:

Step 1

Cut half of each chicken wing by slicing it through the joint where the drumette and the wing join together then slicing through the skin between breasts and thighs.

Step 2

Make two deep cuts on each side to separate the breasts and make a slight cut with the breast bone.

Step 3

Now cut each breast off the carcass you can use the tips of the knife for this purpose while making sure to keep the blade pressed against the bone and slice through the cartilage to get the breast piece with the wing you can reserve the remaining carcass and the chicken for later use.

Step 4

Then remove the tenders from the breasts trim them according to your needs and season the tenders with:

  • Olive Oil
  • Kosher Salt
  • Black Pepper
  • Herbes de Provence
  • Cayenne Pepper

Step 5

Under the skin right next to the wing bone push your fingers gently into each breast so that it can separate from the meat then slide one tender under the skin middle of it and smooth over the skin then sprinkle kosher salt on the breasts.

Step 6

Get a skillet pour olive oil and heat it after oil add chicken breasts ensuring the skin-side of the breasts is down then cook for about 6-7 minutes until the bottom is brown after 7 minutes flip them also reduce the heat and again cook till there is no pink color inside you can use an instant-read thermometer to check the temperature, if it is 165 degrees F it means your chicken is ready.

Step 7

In the skillet add butter, rosemary, and thyme cook with chicken with butter herb mixture then remove the chicken from the skillet now pour stock into the skillet and boil it well on high heat for about 2 minutes till the thickness of the sauce is according to your needs.

Step 8

Make slices of the chicken breasts pour spoon sauce over the top and serve.
